Beef stroganoff

Here’s a classic and flavorful Beef Stroganoff recipe:

Ingredients:

  • 500g beef tenderloin or sirloin, thinly sliced into strips
  • 2 tablespoons olive oil or butter
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 200g mushrooms, sliced (white or cremini mushrooms)
  • 1 tablespoon flour (for thickening)
  • 1 cup beef broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • 1/2 cup sour cream
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Egg noodles, rice, or mashed potatoes (for serving)

Instructions:

  1. Prepare the beef: Season the beef strips with salt and pepper. In a large skillet, heat 1 tablespoon of olive oil or butter over medium-high heat. Sear the beef strips for 2-3 minutes on each side, until browned but still pink inside. Remove the beef from the skillet and set aside.

  2. Cook the vegetables: In the same skillet, add the remaining tablespoon of oil or butter. Add the chopped onion and cook for about 5 minutes until softened. Stir in the garlic and sliced mushrooms, cooking for another 5 minutes until the mushrooms are golden and tender.

  3. Make the sauce: Sprinkle the flour over the vegetables and stir well. Cook for 1 minute to get rid of the raw flour taste. Slowly pour in the beef broth while stirring, making sure to dissolve any lumps. Add the Dijon mustard and paprika, and bring the mixture to a simmer. Cook for about 5-7 minutes, until the sauce thickens slightly.

  4. Add sour cream and beef: Stir in the sour cream, making sure it's well blended into the sauce. Return the beef strips to the skillet and cook for another 2-3 minutes, just until the beef is warmed through.

  5. Season and serve: Taste the sauce and adjust seasoning with more salt and pepper if needed. Serve the beef stroganoff over egg noodles, rice, or mashed potatoes. Garnish with fresh parsley.
